Souvla is one of Cypriots favorite ‘sports’. Well not really a sport but for many it is regarded as such. Souvla is a meat dish made on charcoal, it can be made with pork, lamb or chicken. Large meat pieces are cooked on a skewer (also known as souvla, hence the dish’s name) over charcoal for 1 to 2 hours depending on meat type and other conditions. It is famed among Cypriot men that the timing, the height and the heat from the charcoal is a delicate science and it is perfected by years of experience in the ‘sport’. Souvla is traditionally eaten on Easter Sunday, Christmas day and every other Sunday!, at home or at picnic sites.
